Dining and Dancing is a space to experiment with all the potential combinations of live performance with elevated dining experiences. This first experimental presentation, conceived by Michelin alums Kaylen Tanner (2-star GK, 2-star Saga, 1-star River Cafe) and Devika Manchanda (2-star GK, 3-star Le Bernadin), will be a 5 Course Dessert Tasting Menu designed to accompany a 90-minute dance play held at Williamsburg cultural hub Brick Aux. Included in ticket price is also a curated beverage pairing.

FROM THE CREATORS

Kaylen Naomi Tanner

“While I’ve maintained a life in both performance making and fine dining simultaneously, I’ve come to find some unexpected commonalities between the two. For me, this project is an experiment in both how an emotional arc of a narrative can affect taste and how the incorporation of highly refined food service can enhance the power of storytelling.”

Kaylen is a transdisciplinary generative artist focused on the creation of highly athletic dance plays. As a performer she has graced iconic stages domestic and abroad, from California to Moscow. Nurtured at Booker T Washington HSPVA in Dallas and stretched at Pace School of Performing Arts in Fidi, Kaylen is deeply versed in performance devising, mime technique, Shakespeare and Greek classics, dance composition, and a range of dance performance styles.

Last year she premiered her solo show RETURN at The Brick Theater in Williamsburg, for which she acted as creator, composer, playwright, director, costumer, and performer.

Professionally, Kaylen currently serves as a Captain at Two Michelin Starred Gabriel Kreuther in midtown Manhattan. There she crafts curated dinner plans for each of her guests, conducts the execution of that plan across several departments, and channels the heart of Alsace in her presentation of world class creations.

Devika Manchanda

“I love pastry as an artistic medium because it is an amalgamation of both scientific precision and artistic freedom. This project is another such confluence of two distinct disciplines, both with immense powers of expression. My hope is that this project establishes a feeling of connection amongst the audience through a shared experience of food, art, and engaged storytelling.”

Devika is a classically trained, passionate pastry chef driven by a deep respect for ingredients, techniques and cultural heritage.

Beginning her pastry education in India at the age of 17, she went on to refine her skills at the Culinary Institute of America, New York. Her career highlights include a multitude of prestigious kitchens, from The Oberoi, New Delhi to Le Bernardin, New York. A keen interest in the precision of chocolate work and confectionery as well as the architecture of modern plated desserts colors her work.

Currently, she holds the role of Pastry Chef de Partie at two Michelin starred Gabriel Kreuther, leading pastry service with an excitement and appreciation for both the beauty of pastry and the communal spirit of food and fine dining.
